John Kunkel, owner and founder of 50 Eggs Inc.’s newest concept Chica Las Vegas delivers the robust and vibrant flavors of Latin cuisine combined with a dynamic wine and mixology program. Crafted by celebrity Latina chef Lorena Garcia, the diverse menu draws inspiration from classic renditions and will give guests the opportunity to explore the flavors of Latin American cuisine as one culture, with influences from Venezuela, Peru, Brazil, Mexico, and Argentina, among many more. Eater Las Vegas calls Chica “the most-anticipated Las Vegas restaurant set to debut in spring of 2017,” and it is open daily for lunch, dinner, and weekend brunch. Multiple private dining areas will offer group space to enjoy a variety of events, from cocktail parties to large seated dinners.

The home cooking that is enjoyed by the people of Central and South America finds a home here in Chef Garcia’s kitchen, enhanced and made even more vibrant for Chica. Latin Fusion cuisine is Chef Garcia’s forte, and it shows: appetizers, main courses, desserts, and even the drinks are specially crafted for their heritage and made to fit the modern, dynamic venue of Chica.

Ceviche Challenge Group Experience

Up to 14 People

Learn how to filet a fish like the pros and assemble the perfect ceviche at Chica. Options include a drink pairing, and a hands-on interactive “food challenge” format that gives groups an opportunity to make their own.

Try it at Home

Dulce De Leche French Toast Recipe

Yields 4 Servings

  • 8 thick slices of Challah or Brioche Bread
  • French Toast Batter
  • Powdered Sugar
  • Macerated Berries
  • Whipped Cream

FRENCH TOAST BATTER

  • 2 cups Heavy Cream
  • 1 cup Granulated Sugar
  • ½ cup Egg Yolks
  • ½ cup Milk
  • 1 ½ tsp Vanilla Extract
  • 1 tsp Kosher Salt
  • Zest of one Orange
  1. In a medium bowl, whisk together the egg yolks, milk, heavy cream, sugar, vanilla, salt and orange zest. Pour directly into a shallow dish that you can use to dip the bread in.
  2. Dip bread in on one side and then flip it over to the other. Be sure that you are working quickly, so that the bread doesn’t absorb too much liquid.
  3. Once both sides of the bread are coated with the liquid, place in a 350* Skillet or Griddle, cooking for about 2 to 3 minutes on each side. Bread will develop a crisp caramelized crust on the outside and stay soft in the center.
  4. Serve immediately topped with Macerated Berries, Whipped Cream, and Powdered Sugar.

 

MACERATED BERRIES

  • ½ cup Blackberries
  • ½ cup Raspberries
  • ½ cup Blueberries
  • ¼ Lemon Juice
  • 2 Tbsp Honey or Agave
  • Zest of one Lemon

Mix all ingredients together and allow 30 minutes to soak. Spoon on top of French Toast, or any other dessert preferred.
