The Dorsey Sessions
The Dorsey Sessions are a series of pop-up events featuring noteworthy visiting bartenders from across the world. These gatherings, curated by barman Sam Ross and The Dorsey team are a cultural exchange for the bar community as well as the guest, giving each a different viewpoint from another bartender, market, and expanding their knowledge to new trends elsewhere in the world.
The Dorsey Sessions ⨯ The Golden Tiki
Thursday, August 22 | 9:00 p.m. – 11:00 p.m.
Adam Rains, Lead Bartender, Grand Exalted Poobah and High Priest of Skull Island of The Golden Tiki in Las Vegas will step behind The Dorsey bar to serve guests signature nostalgic classics and new creations found at the mid-century tiki bar. The Golden Tiki has been awarded Best Bar by Las Vegas Weekly, one of the 12 Best Tiki Bars In America by Food Network, and many more. Rains has received certifications from United States Bartenders Guild, BarSmarts, Southern Glazers Wine & Spirits Academy, Court of Master Sommeliers, International Sommeliers Guild, Consejo Regulador de Tequila and the Certified Cicerone Program.
The Dorsey Sessions ⨯ Esther’s Kitchen
Thursday, October 10 | 9:00 p.m. – 11:00 p.m.
Keith Bracewell, Head Bartender at Esther’s Kitchen in Las Vegas will serve Dorsey Sessions guests signature cocktails the seasonal Italian restaurant and bar has become well-known for. Complementing the Esther’s aesthetic, Bracewell favors bright, fresh seasonal ingredients and agave-based spirits. Before Esther’s, Bracewell split his creative energies between the worlds of music and mixology and helmed several notable bars in Los Angeles and San Francisco.
The Dorsey Sessions ⨯ Ada’s

Sonia Stelea, GM and bar lead at Ada’s Las Vegas will offer guests specialty cocktails from the European-inspired Summerlin restaurant. Ada’s was inspired by the spirit of legendary barwoman Ada Coleman of the Savoy Hotel and driven by the idea that hospitality begins with offering every guest the best ingredients, preparation, and service possible. Stelea is best known in Las Vegas for opening and establishing the remarkable, award-winning bar program at Esther's Kitchen, and has also she has helmed bars at several Top 100 restaurants in San Francisco, including most recently Cotogna (sister to Michelin 3 star Quince).
The Dorsey Sessions ⨯ Trash Tiki
Sunday, November 17 | 9:00 p.m. – 11:00 p.m.
Kelsey Ramage and Iain Griffiths of Trash Tiki in Toronto are well-known for their global pop-up tour, bringing their sustainability and zero-waste message and platform to large audiences across the world. Ramage and Griffiths are the leading industry figures in zero-waste efforts and Trash Tiki has become the bartender’s resource for all things environmentally minded. Guests will get the opportunity to sip on their signature tiki drinks and feel good while doing so.
The Dorsey Sessions ⨯ Starboard Tack
Thursday, December 19 | 9:00 p.m. – 11:00 p.m.
Bryant Jane, co-owner and lead bartender of Starboard Tack will serve guests his classic and original signature cocktails the retro, rum bar has become known for. Starboard Tack has been a Las Vegas staple since 1972 and the original DTLV bar was once the watering hole of famous strip performers, casino employees, and locals alike. In 2017, Jane and his partner resurrected Starboard Tack when they took over the location, adding their own touches and creating a place for locals and tourists to enjoy craft cocktails and elevated bar food.
