Considered some of the best Chinese food Las Vegas has to offer, the wide range of regional dishes is impressive. Featuring Cantonese, Szechuan, and Beijing cultures, the chef sources the finest ingredients. Must-try dishes include siu mai with soft quail egg, Iberico pork, and black truffle from the Dim Sum menu. Crispy triple-cooked wagyu beef short ribs are another mouth-watering selection. The main event is the apple-wood smoked Peking Duck. It takes 48 hours to prepare in a special air-drying duck fridge before being roasted. Order it in advance when you book your reservation.

Mott 32 has a large selection of vegan and vegetarian options. You’ll find plenty of savory plates to indulge in; from wild mushroom and water chestnut dumplings to braised tofu. What about drinks? Vegan Champagne, red and white wines are available.

In 2009, Chef Alan began his career as part of the opening culinary team for Hakkasan in Miami, which was later named one of the top 10 restaurants in the city. He continued to climb the ranks within the Michelin-starred Hakkasan family over the next few years, opening the New York location in 2011, Las Vegas restaurant in 2013 and Beverly Hills outpost in 2014 as the executive chef. In 2016, Chef Alan made his way back to Las Vegas, joining the Wing Lei team at Wynn Las Vegas as Chef de Cuisine. As Executive Chef of Mott 32 Las Vegas at The Palazzo, Chef Alan brings patrons delicacies derived from Cantonese, Szechuan, and Beijing cuisine. He strongly believes in using the finest, seasonally-focused ingredients and allowing their authentic flavors to shine in his dishes. “Chinese cuisine is one of the world’s most marvelous culinary cultures,” said Chef Alan. "Our goal is to provide a new, modern twist on authentic Chinese cuisine, and we hope to express this through our food to all the customers at Mott 32 Las Vegas.”
Mott 32 explores immersive dining experiences that highlight the indulgent beauty of unlikely pairings. There is no food and beverage minimum required for main dining room seating. Group dining and beverage menus are available. Any groups of more than 12 will be required to select a menu in advance.
